Carolina's Restaurant a "Must" for Visitors and Locals Alike

 Carolina's Southern Bistro is a landmark in Charleston’s rich culinary history, offering a contemporary approach to Lowcountry cuisine, with local ingredients and classically rooted preparations. Check out this fabulous Yelp review below:

"Were in Charleston for harbor cruise and met a local couple who said "must go". So we did. Was going for the shrimp n grits, got the wontons to start. Asked about the tasting menu for the night. Decided hey, on vacation ... Was amazing! Started with a spoon of smoked trout salad on shaved radish! Very tasty! Then had a marinated shrimp on frizee salad. Unbelievable! Moved to a seared scallop with kimchee, black sea salt. The broth was billed as "ramen" but had a haunting fish essense that was magical. There was 1/2 a fried soft shell crab in tempura batter somewhere in here too... Again, just small bites but so good.

Finally, skirt steak on mashed taters. A finale perfection! Thought we were done and out comes cinnamon toast with a small crock of chocolate creme, cheese wedge and candied walnut pieces. I felt like a special deal had been created just for us! Chef Jill came out to chat for a moment. So nice! I would recommend this to all. We spoke to others there and all were regulars that love it. You really can't please everyone but, when you do please most, that's a feather in the chef togue (cap). Way to go Chef Jill!"

Chef Matthew Niessner: The Man Behind Halls Chophouse's Mouth-Watering Cuisine

The Charleston City Paper recently published a great article on the man behind the life-changing dishes at Halls Chophouse in their article "Six talented Charleston chefs who deserve your love and devotion". 

Eric Doksa writes of Chef Matthew Niessner:

"Let's be honest, the first things that come to mind when we think about Halls Chophouse are the big, juicy, dry-aged rib-eyes and the attentive service. When we walk in the door, we expect a big welcome from a member of the Hall family in addition to some excellent food. But most people don't have a clue who's responsible for running the kitchen at Halls. It's time we pay respect to Executive Chef Matthew Niessner, a guy who can cook more than just a steak. The menu regularly features a variety of creations: braised Maple Leaf Farm duck with fingerling potatoes, pan-roasted chicken with Sea Island Red Pea succotash, and, most recently, a cornmeal and Old Bay-dusted soft-shell crab on white bean, corn, green bean, and roasted tomato succotash, finished with a creole remoulade. Oh, and we can't forget about the long list of side dishes, which stand up as some of the best in town, proving that Niessner's talents go way beyond red meat."
